1 ¾ all purpose flour
1 ¼ cup yellow cornmeal
1 tsp baking powder
1 tsp salt
1 tsp sugar
2 cups of milk
3 tbsp vegetable oil
2 large eggs
Prepare waffle iron.
In a large bowl, combine flour, cornmeal, baking powder, sugar and salt.
Add milk, oil and eggs; stirring until smooth. (You can use your mixer as well).
Pour batter onto hot waffle iron and bake in batches. Set aside, keep warm.
Tip: you can double the recipe and freeze it. When you’re are ready to eat it, pop the waffle quarters’ in a toaster and enjoy it warm.
Excellent with Chili !
